WIAW #5 — Sometimes You Just Need a Girls’ Night

Hi! I hope everyone’s Wednesday is going well so far–halfway through the week!

Annnnnyways, ready for another WIAW? As always, thanks to the fabulous Jenn for hosting every week! And if you haven’t already, head on over to her site to see all the delicious eats other bloggers are sharing!

 

Breakfasts this week…

This past Monday’s breakfast was suuuper random–but it worked! I had leftover oatmeal that I hadn’t finished from a previous day, so I re-heated that, added some milk, apple slices, LoveGrown granola, and milk. Also had two egg whites w/ S + P on the side. Like I said, very random but it filled me up!

Tuesday was a quick n’ easy breakfast–pumpkin overnight oats! With banana, chia, and almond butter on top. Super ugly photo, though! I can’t wait to have a functioning camera back again!

 

Lunches this week…

I’ve made the same salad since I recently picked up a package of tofu last week at the store. I’ve been seasoning it with Butt Rub (love this stuff!) and baking it for about 15 minutes before mixing it in with the salad. Usually a bed of spinach or kale with carrots, apples, avocado, and peppers. So good and really does fill me up!

Lunch on Monday was a cup of tomato soup, an egg sandwich (1 egg + 1 egg white + WW English muff + Muenster cheese), and roasted carrots and peppers on the side. Needed warm food after how cold it’s been outside!

Dinners this week…

Feeling like a bad blogger–the only dinner pics I snapped were of two nights that we got carry-out or ate at a restaurant! Woops.

This place never disappoints!

And yesterday was kind of just “one of those days”…and I was exhausted by the end of it. Two of my roomies and I declared it an appropriate excuse to go out for a spontaneous Girls’/Roomies’ Night Out :) Just what we needed!

We headed over to Elsa’s, a Mexican place about 10 minutes from campus. Standard Mexican food, nothing fancy in the slightest, but Tuesdays are also their 1/2 off all imported beer special…couldn’t pass that up! ;)

I ordered a quesadilla with cheese, chicken, onions, peppers, and mushrooms…but all 3 of us totally ate way too many chips beforehand and couldn’t make it through our dinners! I ate half of mine, so leftovers it is for lunch today.

 

 

P.S….did I mention I cannot wait until I have my camera back and working again!?! ;)
